Methi matar malai







Ingredients-
Fresh green pea/matar-2 cup
Chopeded onion-1 large
Chopped green chilli-2
Chopped tomato-2 medium
Garlic paste-2 tablespoon
Ginger paste-1 tablespoon
Chopped fenugreek leaves/methi -1 cup
Fresh milk cream-2 tablespoon
Bay leaf-2
Cloves 3 to 4
Cinnamon- 1/2 stick
Green cardamom-3 (crushed)
Red chilli powder-1/2 tablespoon
Turmeric powder-1/2 tablespoon
Cumin powder-1 tablespoon
Black pepper-1/2 tablespoon
Coriander-1/2 tablespoon
Salt as required
Oil for cooking
Method-
  • Heat oil in kadahi add bay leaf, cinnamon, cloves, crushed cardamom.Let them crackle
  • Add chopped onion and saute until it gets golden brown,then add ginger, garlic​ paste.stir it for few minutes.
  • Now  add chopped tomato,chopped green chilli and stir until tomato get soft .
  • Add pea ,chopped fenugreek leaves,salt and stir until it done.
  • Add turmeric powder,cumin powder,red chilli, powder ,black pepper powder  coriander powder,salt and little bit of water and saute until oil start to seprate from spices then add fresh milk cream and saute for 2 to 5 minutes
  • If you like thin gravy then add water and cook it properly
  • Serve with roti or rice

Jaggery Paratha




Ingredients-
Wheat flour- 2cup
Jaggery/gud-1/2 cup grated
Chopeded coconut-2 tablespoon
Cardamom powder-1 pinch
Sesame seed(optional)-1/2 tablespoon
Cooking oil-2 tablespoon

Method-

Take a bowl add flour and water and knead it softly.keep aside for 30 minutes
Take another bowl add grated jaggery, chopeded coconut ,cardamom and mix it
Divide dough into equally portion and make small ball .
Roll it like Puri and place jaggery mixture  in centre .
Seal all the edge of puri and make again ball and roll it with the help of roll pin like chapati and sprinkle sesame seed and press it with tip of finger
Heat non stick tawa and put paratha and cooked it both side and pour one tablespoon both  side and cooked until it gets slightly brown
Serve hot

Masala vada curry

Ingredients-
Bengal gram/gram flour/chana dal-1cup
Chopped green chili-2
Chopeded onion- 1 large
Chopeded tomato-1 large
Chopeded ginger-2 tablespoon
Garlic paste-2 tablespoon
Cloves-3
Cardamom -3 to 4
Bay leaf-2
Cinnamon- 1/2 inch
Red chilli powder-1/2 tablespoon
Turmeric powder-1/2 tablespoon
Cumin powder -1 tablespoon
Black pepper-1/2 tablespoon
Salt to taste
Oil for cooking
Method-

  • Clean and wash chana Dal through running water.
  • Soak chana dal for 3 to 4 hours or overnight
  • Drain it from water.
  • Grind chana dal coarsely in mixer with help of a little  bit of water.
  • Do not use excess water to grind it.
  • Batter consistency should  not be  watery.
  • Take a bowl add grinded chana dal,chopped green chilli,chopped ginger,garlic paste,red chilli powder,turmeric powder, asafoetida and salt and mix it.
  • Heat oil in kadahi,take a tablespoon batter and put in hot oil and fry until vada  gets golden brown.you can fry 4 to 5 vada simultaneously​.
  • Drain it from oil.
  • Heat oil in kadahi add bay leaf ,cinnamon ,clove,cardamom,cumin seeds.Let them crackle then add chopped onion and stir until it get golden brown. Further add ginger garlic paste,chopped tomatoes and saute until it gets soft .
  • Add cumin powder,coriander powder,
  • red chilli powder,turmeric powder,black pepper powder,salt and a little bit of water and saute until oil start to separate from spices and  further add required water in it and boil it for 2 minutes then add  vada  and simmer it for few minutes.
  • Garnish with chopped coriander.
  • Serve hot with chapati.

Achari paneer


 Ingridents-
paneer-200grams
Mustard seed-1/2 tablespoon
Fenugreek seed-1/2 tablespoon
Kalonji seed -1/4 tablespoon
Fennel seeds-1/2 tablespoon
Asafoetida- a pinch
Green chilli-2
Ginger-garlic paste -1 tablespoon
Red chilli powder-1/4 tablespoon
Turmeric powder-1/2 tablespoon
Coriander powder-1/2 tablespoon
Cumin powder-1/2 tablespoon
Amchur powder-1/4 tablespoon
Salt to taste
Oil for cooking
Method-

  • Take nonstick tawa , add mustard seed, fenugreek seeds, fennel seeds  and roast it in medium flame then grind it coarsely.
  • Heat oil (approx-2 to 3 tablespoon)in kadahi.Put paneer cubes and sprinkle salt ,red chilli powder on it and fry for 2 to 3 minutes.
  • Heat oil again  in  other kadahi, add,  chopped Green Chilli,kalonji seed, ginger garlic paste and saute for few minutes then add  grinded coarsely​ spices ,when they start to give aroma add turmeric powder, red chilli powder  ,aamchur powder cumin powder, coriander powder, asafoetida,salt and stir untill  oil start to separate from spices then add fried paneer cubes and cooked it.Now achari paneer is ready to serve.
  • Serve it with Paratha.

Chinese fried rice





Ingredients-

Rice-200 gram
Chopped onion-1 large
Chopped carrot-2 tablespoon
Chopped beans-2 tablespoon
Green peas -1/4 cup
Chopped capsicum-3 tablespoon
Spring onions-2 tablespoon
Chopped ginger-1 tablespoon
Garlic paste-11/2 tablespoon
Red chilli sauce-1 tablespoon
Soya sauce-2 tablespoon
Vinegar -2 tablespoon
Black pepper-1/2 tablespoon
Tomato ketchup -3 tablespoon
Salt to taste
Oil for cooking

Method-

Boil water in pan then add salt and rice and stir it occasionally for 5 to7 minutes.when rice is cooked then immediately drain it and spread on large size plate .
Rice should not be over cook and sticky
Heat oil in kadahi add chopped onion and saute until it light golden brown then add ginger, garlic paste,chopped carrot,chopped
Beans,chopped capsicum,green peas and stir for few minutes then add soya sauce ,red chilli sauce, vinegar,salt, tomato ketchup,and stir it and add cooked rice and saute it
Serve hot with manchurian

Chinese macaroni


Ingredients-
Macaroni- 2cup
Chopped onion-1 large
Chopped tomato-2 large
Garlic paste-2 tablespoon
Ginger paste-1 tablespoon
Soya sauce-2 tablespoon
Chopped green chilli-2
Red chilli sauce-1 tablespoon
Vinegar -1 tablespoon
Black pepper-1/2 tablespoon
Tomato ketchup
Salt to taste
Oil for cooking
Method-
Boil water in kadahi add salt,and few drop of oil then add macaroni and cooked it 5 to 7 minutes then drain it and put in cold water and again drain it
Heat oil in Kadahi add chopped onion, chopped green chilli and saute until it get golden brown then add garlic, ginger paste and stir for 2 to 3 minute .Add soya sauce,red chilli sauce, vinegar ,salt black pepper an stir it.Add boil macroni in it and stir it

Aloo tikki chat with green pea

Ingredients-
Boiled green peas-1cup
Boiled aloo-2 large
Sev namkeen-1/2cup
Roasted peanut-1/2 cup
Chopped green chilli-2
Red chilli powder-1/4 tablespoon
Black salt -according to taste
Chopped onion -1
Chat masala-1/2
Sweet tamarind chutney-2 tablespoon
Chopped ginger-2 tablespoon
Chopped coriander-2 tablespoon
Asfoetida-a pinch
Garlic paste- 1tablespoon
Turmeric powder-1/2 tablespoon
Roasted cumin powder-1/2 tablespoon
Method-
  • Take a bowl add boiled mashed potato, chopped ginger, chopped coriander chopped green chilli,salt , and mix it .Divide the mixture and make round shape tikki
  • Fry until it get golden brown and crispy from both side
  • Heat oil in Kadahi,add garlic paste, chopped green chilli, turmaric powder boiled green pea,chat masala asfoetida,masala,cumin powder,salt and stir until it get soft.
  • Take a bowl  place  hot tikki ,then add fried peas, chopped onion,roasted peanut red chilli powder ,cumin,powder,sev namkeen chopped green chilli,chat masala black salt,and tamarind chutney
  • Serve it
