Katori Chaat

  Ingredients.. 

Plain flour-2 cup
Kalonji-1/2 tablespoon
Salt to taste
Vada -5 to 6
Chopped tomatoes -1 medium
Chopeded coriander-2 to 4 tablespoon
Chopped green chilli-2
Chopped onions -1 large
Tamarind chutney -3 to 5 tablespoon       
Coriander chutney-2 tablespoon
Mix sev namkeen-1/2 cup
Roasted cumin powder-1/2 tablespoon
Red chilli powder-1/4 tablespoon
Chaat masala-1 tablespoon
Curd -4 to 6 tablespoon
Black salt-1/4 tablespoon
Steel katori
Oil for frying 
Method-
Take a large bowl add plain flour,salt ,kalonji and 1/2 cup oil and mix it well
Knead dough with help water.dough should  not be soft.
Rest it for 15 minute       
Devide dough into equal portion and make a ball
and roll it like chapati and make a tiny hole on all surface of chapati from both sides with the help of fork 
Take a katori and grease  all external surface of katori and wrap with chapati
from all side 
Make a sure all side of katori wrap with chapati and remove extra part and press with palm all side of katori
Heat oil in deep kadahi and put  katori slowly in oil from upward side and splash oil slowly on edge of katori ,when it get to seprate from  steel katori then remove steel katori and fry until it gets golden brown from both sides
Remove it from oil
Take a plain flour katori add vada then topping with tamarind chutney,coriander chutney,black salt,red chilli powder,roasted cumin powder,and mix sev namkeen
Garnish with chopped coriander,curd
Serve it

Dahi vada



Dahi vada
































Ingredients.

For vada
Urad dal-2 cup
Chopeded green chilli-2
Chopeded ginger-2 tablespoon
Chopped coriander-3 tablespoon
Salt to taste
Asafoetida-a pinch(optional)
Lukewarm water as required
Oil for frying
For topping
Tamrind chutney
Coriander chutney
Curd-2 cup
Sugar- 1/2 cup sugar
Black salt
Roasted cumin powder -2 tablespoon
Red chilli powder-1 tablespoon
Sev namkeen 2 to 3 tablespoons
Boondi namkeen- 2 to 3 tablespoon

Method-

  • Clean and wash  urad dal through running water .
  • Soak urad dal overnight or 6 to 8 hours.
  • Grind urad dal coarsely with help of water
  • Batter consistency should be thick.
  • Remove all batter from grinder and put on a large bowl .
  • Add chopped green chilli,chopped ginger chopped coriander leaves,salt  and whisk batter  in same direction.
  • When it's done than drop a little bit of batter in cold water.if batter float on top of water ,its means batter is ready to fry.
  • Drop vada in hot oil with help of wet finger and fry until it gets golden brown.
  • Drain it from oil and dip in lukewarm water for 15 minute .In lukewarm water you can add salt and asafoetida.
  • Drain it from water and lightly press with palm one by one so that excess water ooze out
  • Take a thick consistency curd in bowl add sugar and mix  it
  • Take a bowl put vada than add beaten curd,tamarind chutney,coriander chutney,black salt,roasted cumin powder red chilli powder.
  • Garnish with sev,boondi
  • Serve it

Cauliflower tikki /Gobi tikki

How to make cauliflower tikki step by step+video

Take a bowl add cauliflower florets and medium hot water.

Then add a little bit of salt.

Drain it from water.

Grinded it coarsely in grinder.

Then add besan/chickpeas flour

Chopped ginger

Chopped green chilli

Kalonji

Ajwain

Salt

Turmeric powder

Red chilli powder

Aamchur powder

Cumin powder

Garlic paste

Chopped coriander

A little bit of Water

Mix it well

Make a round tikki shape


Heat oil in kadahi

Fry until it get crispy golden brown.

Ready to serve

Grated cauliflower- 11/2 cup
Ginger-garlic paste-2 tablespoon
Chopped green chilli-2
Red chilli powder-1/2 tablespoon
Turmeric powder-1/2 tablespoon
Cumin powder-1/4 tablespoon
Black pepper powder- a pinch
Chopped green coriander-2 to 3 tablespoon
Kalonji seed-1/4
Besan/gramflour-1 cup
Chaat masala-1/4 tablespoon
Salt to taste
Mustard Oil for deep frying
Method-
Take a large bowl add grated cauliflower
Cumin powder,black pepper powder red chilli powder, turmeric powder,ginger
Garlic paste,chopped green chilli, chopped
Coriander,kalonji seed,chat masala,besan
Salt and mix it.
Take small portion of mixture and make a round shape tikki.
Heat oil in kadahi and  deep fry until it get golden brown from both side.
Drain it from oil.
Serve hot with chutney.

Ingredients-
For making aloo tikki
Boiled aloo- 4
Chopped ginger-2 tablespoon
Chopped green chilli- 1 tablespoon
Chopped coriander-2 tablespoon
Salt to taste
For chole-
Dry peas/chickpea-2 cup(soak for 6 to 8 hours or overnight).
Chopped onion- 2 large
Chopped green chilli-2
Chopped tomatoes-3
Bay leaf-2
Cloves-4
Cinnamon-1/2 inch stick
Cardamom-2
Cumin powder-1 tablespoon
Ginger garlic paste-2 tablespoon
Black pepper-1/2 tablespoon
Coriander powder-1/2 tablespoon
Turmeric powder -1/2 tablespoon
Red chilli powder-1/2 tablespoon
Aamchur powder-1/2 tablespoon
Asafoetida -1 pinch
Salt to taste
Oil for cooking

For making chaat

Chopped ginger-2 tablespoon
Chopped coriander-2 tablespoon
Chopped onion-2 tablespoon
Tamarind chutney /imali -2 tablespoon
Chaat masala-1/2 tablespoon
Green chutney-1/2 tablespoon
Roasted cumin powder-1 tablespoon
Sev namkeen -2 tablespoon
Method-

  • Take a pressure cooker add water,and pea/chickpea salt and cooked it 4 to 5 whistle then check it if pea/chickpea get soft then remove from pressure cooker.
  • Heat oil in kadahi add  bay leaf,cloves cardamom,cinnamon.Let them crackle.
  • Add chopped onion, green chilli,and saute until it get golden brown then add chopped tomatoes,ginger,garlic paste and saute until tomato get soft .
  • Add turmeric powder,red chilli powder cumin powder,black pepper powder
  • Coriander powder, asafoetida ,amchur powder ,salt and a little amount of water and saute until oil start to seprate from spices.
  • Then add boiled pea/chickpea and stir for 2 to 3 minutes .
  • Take a bowl add boiled mashed potatoes,chopped green chilli,chopped ginger,chopped coriander,salt and mix it properly and make round shape tikki and slightly press with help of palm and fry until it gets golden brown and crispy.
  • For making chaat-
  • Take a bowl put tikki,then add chole chopped onion,green chutney tamarind,black salt roasted cumin powder chutney,Chaat masala,chopped ginger slice,chopped coriander.
  • Sprinkle sev namkeen on it
  • Serve hot.
