Ingredients-

Boiled egg-5
Chopped onion -2 large
Chopped tomato -3 large
Garlic paste- 2 tablespoon
Ginger paste-11/2 tablespoon
Red chili powder-1​/2 tablespoon
Turmeric powder-1​ tablespoon
Cumin powder 11/2 tablespoon
Coriander powder -1 tablespoon
Kasuri methi -1/2 tablespoons
black pepper-1/2 tablespoon
Green Chilli - 1 to 2
Bay leaf - 2
Asfoetida (hing) -1 pinch
Cinnamon -1 stick
Cloves -4
Cardamom - 4
Salt to taste
Method-

  • Heat 2 tablespoon oil in fry pan. Add boiled egg,salt ,fry until they get golden color.
  • Remove from oil.
  • Heat oil in Frying pan.Add cumin seed,bay leaf cardamom,cloves, cinnamon.
  •  Allow them to crackle.
  • Add chopped onions,stir until it get golden brown then add chopped tomato, chopped green chilli and stir until it turns soft.
  • Add ginger garlic paste ,cook it  for few minutes.
  • Add turmeric powder,red chilli powder, cumin powder, black, pepper powder, coriander powder,kasuri methi,asafoetida salt,a little bit of water , stir  it until oil comes out from spices  .
  • Now add boiled eggs and stir it for 2 to 3 minutes.
  • Add water to make gravy thin and boil for 2 to 3 minutes.
  • Serve with hot roti or rice.

How to make chana leaves pakoda step by step+video

Wash chickpeas/chana leaves through running water.
Pluck leaves  from stalk and chopped it .
Then add chopped onions
Chopped green chilli
Chopped coriander leaves
Chopped fenugreek
Chopped ginger
Garlic paste
Rava/ semolina
Besan/gram flour/chickpeas
Red chilli powder
Turmeric powder
Salt
Mix it
Add water in it
 Mix it
Heat oil in kadahi
Drop mixture in hot oil
Fry until they get golden brown colour
Remove from oil and ready to serve.

Besan flour/gram flour-1cup
Chopped fenugreek leaves-1/2 cup
Garlic paste- 1 tablespoon
Chopped ginger -2 tablespoon
Green chilli 2-3(chopped)
Turmeric powder -1/2 tablespoon
Red chilli powder -1/2 teaspoon
Chopped coriander 3-4  tablespoon
Rava -1/4 cup
 Salt as required
Oil for frying

Method-

Take a bowl add chopped chana leaves, chopped fenugreek leaves, chopped onion, chopped green chilli, chopped ginger, chopped coriander, garlic paste, turmeric powder, red chilli powder,rava,besan ,salt, as required a little bit of water and mix them well.
Heat oil in kadahi ,drop a tablespoon of mixture, you can fry 4 to 5 pakoda at the same time .
Fry until they get crispy golden brown.
Drain it from oil.
Serve it with chutney.

Ingredients- .
Semolina(rava)-1/2 cup
Wheat flour-1/2 cup
Oil for frying
Water-as required
boiled mash dry pea -2 cup
Baking soda -1 pinch
Black salt as required
Regular Salt as required
Roasted cumin powder-1/2 table spoon
Black pepper powder-1/2 table spoon
Red chilli powder-1/4
Coriander leaves -1/2 cup
Green chilli -2
Tamarind paste-3 table spoon
Asafoetida-1 pinch
Coriander chutney -3  to 4 tablespoons
Mint leaves -4
Chopped onion
Besan bhujia
Dry boondi-1/2 cup

Method-

For puri-
  • Take 1/2 cup rava, baking soda and 1/2 cup wheat flour in a wide bowl and mix it
  • Knead dough with help of water​ .Dough should  be neither too soft nor too hard  
  • knead the dough until smooth texture.Keep dough aside for 30 minutes.
  • Divide dough into equal portion and make ball.
  • Roll out each ball and make a like chapati . Chapati shouldn't be thin or too thick
  • Make a tiny Puri with help of cutter or using small round shape lid and roll it.
  • Heat oil in kadahi add tiny puris and deep fry  until get crispy and brown.
  • Each Puri press with spatula(to puff them up)
  • The heat of oil should be medium flame
  • For golgappa pani- 
  • Take a grinder add ,tamarind paste,green chilli,black salt,regular salt,cumin powder,black pepper powder,asafoetida, red chilli powder,mint leaves and less amount of water and grind it.Then add water according to amount of ingredients and mix it.Add dry boondi on it.

  • Assembling of golgappa

  • Take a golgappa making hole in center by using finger or spoon then add boiled and mashed pea ,chopped onion,besan bhujia, coriander chutney, coriander leaves,and fill with pani.
  • If you want to eat sour and sweet golgappa then add sweet chutney

 How to make  besan ladoo

Heat ghee in kadahi
Add besan/gram flour in kadahi
Stir it frequently
When besan color turns light yellow brown and start to give aroma then add  cardamom powder and stir it then  remove it from flame
Let it cool then add  grinded sugar
Mix it properly
Take some parts of mixture and make round shape laddo

Besan/chickpea flour-11/2 cup
Castor sugar/grinded sugar/boora
Ghee 11/2 cup
Cardamom powder-3 to 4
Keora water-2 tablespoon

Method-

  • Heat ghee in kadahi add besan and stir it frequently in a slow flame then add cardamom powder and keora water and stir it.
  • when besan color turns light yellow brown and start to give aroma then remove it from flame .
  • Let it cool.
  • Now add grinded sugar and mix it . Don't add sugar in hot besan,besan gets thin due to melt of sugar.you would not make ladoo from this mixture.
  • Keep aside it for cool for 30 to 60 minutes.
  • Take a some parts of mixture and make a round shape ladoo using your palm.
  • Repeat this process from remaining mixture.
  • Ready for serve.
