Palak paneer

Palak paneer


Ingredients-
Spinach-1cup
Paneer-250 gram
Chopped onion -2 medium
Chopeded tomato-2 medium
Chopped green chilli-2
Garlic paste-2 tablespoon
Ginger paste-2 tablespoon
Kasuri methi/dry fenugreek-2 tablespoon
Amchur powder-1/4 tablespoon
Bay leaf-2
Cinnamon-1/2 stick
Cardamom-2
Cloves-4
Cumin powder-1 1/2 tablespoon
Black pepper-1/2 tablespoon
Coriander powder-1/2 tablespoon
Turmeric powder-1/4 tablespoon
Red chilli powder 1/2 tablespoon
Salt to taste
Oil as required
Method-
Blanch spinach for 3 minutes
Remove it put in cold water and remove from cold water and grind it
Heat oil in kadahi add paneer cubes and fry 2 to 3 minutes
Do not over fry .if  fry over ,paneer get hard
Drain it from oil
Add oil and heat it add bay leaf,cloves ,cinnamon,crushed cardamom,when they start to give aroma than add chopeded onion,and saute until it get golden brown than add garlic paste,chopped tomato and saute until it get soft then add,ginger paste,turmeric powder,red chilli powder, amchur powder,cumin powder,black powder,kasuri methi,coriander powder,salt
little amount of water,and saute it .when oil start to get separate from masala than add fry cubes and stir it for 2 to 3 minutes
If gravy is thick than add water and stir it
Garnish with cream
Serve with roti or rice

Crispy phoa finger



Ingredients-
Pea-1/2cup
Phoa/chewda/flatten rice-2 cup
Besan/gram flour
Potato/aloo-1 large
Red chilli powder-1/2 tablespoon
Chopped green coriander
Asafoetida -a pinch
Chopped green chilli-2
Garlic paste-2 tablespoon
Amchur-1/2 tablespoon
Crushed cumin seed-1/4 tablespoon
Crushed coriander seed-1/4 tablespoon
Turmeric powder-1/2 tablespoon
Black pepper powder-1/2 tablespoon
Salt to taste
Oil for deep fry
Method-

  • Put phoa in strainer and  wash through running water and remain it for 5 minute
  • Grind pea coarsely with help of mixer
  • Take a bowl add phoa,grinded pea,gram flour,grated aloo,turmeric powder ,chopped green chilli,red chilli powder, crushed black pepper,chopped green coriander,asafoetida amchur powder,cumin seed, crushed, coriander seeds,garlic paste,salt to taste and knead it
  • Take a small amount of mixture and make a finger shape 
  • Heat oil in kadahi and put the finger one by one and fry until it get golden brown
  • The flame should be slow during fry finger
  • Drain it from oil
  • Serve hot with tomato katchup

Quick bhel snacks

Bhel snacks

Ingredients-
Peanut-1/2 cup
Murmura-2cup
Green pea-1 cup
Chopped onion-2 tablespoons
Chopped green chilli-1 tablespoon
Chopped tomato-1 tablespoon
Sev namkeen-1/2 cup
Black salt-as required
Plain salt as requried
Method-
Heat oil in kadahi add peanut,salt and stir it continuously.When peanut start to crack it's means peanut done
Remove it from kadahi and add oil and heat it
Add pea ,salt and stir until it get soft
Take a bowl add murmura,fry peanut,pea, chopped onion,green chilli, chopped tomato ,sev namkeen and mix it
Serve it

Mushrooms Matar masala


Ingredients-
Sliced button mushrooms-1-cup
Pea -1cup
Chopped capsicum-1
Chopped onion-2 large
Chopped tomato-2 large
Ginger paste-1 tablespoons
Garlic paste-1 tablespoons
Bay leaf -2
Clove-4
Cardamom-2
Cinnamon-1 stick
Turmeric powder-1/2 tablespoons
Red chilli powder-1/2  tablespoons
Cumin powder -1/2 tablespoons
Black pepper-1/2 tablespoons
Coriander powder-1/2 tablespoons
Amchur powder-1/4 tablespoons
Salt to taste
Oil as required

Method-

  •  Heat oil in kadahi add bay leaf ,clove cinnamon,cardamom,when they start to give aroma then add chopped onion and stir until it get golden brown
  • Add chopped tomato ,ginger-garlic paste and stir for few minute when tomato get soft then add turmeric powder,red chilli powder,cumin powder,black pepper,coriander powder,amchur powder,salt and little amount of water and stir it
  • Heat oil in another kadahi,add sliced mushrooms, and fry it for 2 to 3 minutes then add peas, chopped capsicum and stir until it cook.
  • Cooked mushrooms,pea and capsicum add in gravy and stir it for 3 to 5 minutes then add a little amount of water and boil it for 3 to 5 minutes.
  • Serve it

Potato stuffed kachori



Ingredients-
Plain flour-1cup
Wheat flour 1/4 cup
Salt to taste
Ajwain seed-1/2 seed
Oil for frying
Boiled mashed potatoes-2cup
Green peas -1/2cup
Turmeric powder-1/2 tablespoon
Red chilli powder-1/2 tablespoon
Aamchur powder-1/2 tablespoon
Chopped green coriander-1/2 cup
Cumin seed-1/4 tablespoon
Cumin powder-1/2 tablespoon
Coriander powder-1/4 tablespoon
Kasuri methi(fenugreek)-1/2 tablespoon
Mustard seed (small)-1/2 tablespoon
Chopped green chilli powder-1/2 tablespoon
Chopped ginger-1/2 tablespoon
Garlic paste-11/2 tablespoon
Oil for frying
Method-

  • Heat oil in kadahi add cumin seed, mustard seed,when they stop to crackle then add kasuri methi, chopped green chilli, chopped ginger,garlic paste,red chilli powder  turmeric powder,amchur powder,cumin powder,coriander powder,salt,pea and stir for few minute then add mashed potatoes and stir it
  • Sprinkle chopped coriander and mix it
  • Take a bowl , add plain flour ,ajwain,wheat flour and mix it
  • Knead dough with the help of water
  • Dough structure should be soft
  • Rest dough for few minute
  • Divide dough into equal portion and make a small ball 
  • Press a ball and make puri with help of finger or roll pin
  • And place mashed aloo mixtur in centre of puri and seal all edge of puri and make again a ball and press them with palm or roll pin
  • Heat oil in kadahi.put kachori in oil one by one and fry until it get golden brown
  • Drain it
  • Serve hot with chutney

INGREDIENTS..
Chopped cabbage- 1cup
Chopped Capsicum-1cup
Chopped carrot-1,cup
Spring onion-1 cup
Chopped onion-1/2 cup
Garlic paste-3 tablespoon
Chopped ginger -2 tablespoon
Chopped green chilli-2 tablespoon
Red chilli powder-1/2 tablespoon
Black pepper powder-1/2 tablespoon
Corn starch -3 tablespoon
Plain flour-2 tablespoon
Vinegar-2 tablespoon
Tomato catch-up
Soya sauce-2 tablespoon
Salt as required
Oil for frying
Method..

  • Take a bowl add chopped onion, chopped spring onion,chopped capsicum,chopped carrot,chopped green chilli,red chilli ,black pepper powder,chopped green chilli,red chilli powder, garlic-paste,soya sauce,salt, corn flour,plain flour as required and mix it properly
  • Heat oil in kadahi ,make a small ball with the help of palm and fry untill it get golden brown
  • Heat oil in kadahi add chopped green chilli chopped onion, chopped spring onion chopped ginger-garlic paste,and stir it then add soya sauce, black pepper powder vinegar​,salt as required and stir it
  • Take a bowl add two table corn starch and water and mix it and put corn mixture in gravy  for thickness and stir it
  • Add tomato ketchup and stir it then add manchurian ball and mix it
  • Serve it
