Tokri chaat




















Ingredients-
Wheat flour-11/2 cup
Kalonji-1/4 tsp
Salt to taste
Oil for frying
Steel bowl -1
Water
Fry potatoes cubes-1/2 cup
Curd -2 to 3 tablespoons
Tamarind chutney -2 to 3 tablespoons
Roasted cumin powder-1/2 tsp
Red chilli powder-1/4 tsp
Chopped onion -3 to 4 tablespoon
Chopped chilli -1/2 tablespoons
Chopped coriander leaves- 2 tablespoons
Roasted peanuts-1/2 tablespoons
Boiled black chick pea -1/2 tablespoons
Black salt to taste
Chaat masala -1/4 tsp
Namkeen-2 to 3 tablespoons.

Method.

  • Take a large bowl add wheat flour,kalonji, salt and mix it.
  • Then add oil and mix it.After mixing ,it all starts to come together.
  • Knead stiff dough with help of water.
  • Cover the dough with cloth and keep aside for rest 20 minutes.
  • Divide dough and make a large ball and roll out it like chapati .
  • Cut  chapati into long strip and cover with cloth.
  • Take a small steel bowl and grease it from upside down.
  • Take 4 long strip and put it in on steel bowl in cross manner and you get 8 section.
  • Now take a long strip and press it on one section and turn up and down.Doing this process again and again until bowl cover with strip.
  • Heat oil in kadahi put steel bowl  in kadahi and fry both sides. Remove it and let it cool then remove steel bowl carefully and again fry tokri (without steel bowl )in hot oil.
  • Garnish with fried potatoes, chopped onions, chopped coriander leaves, chopped green chilli, tamarind chutney,black salt,chat masala, roasted cumin powder, boiled chickpeas,red chilli powder,curd, namkeen sev.
  • Ready to serve.

Green peas and raw banana sabji




















Ingredients-

Green peas -1 cup
Raw banana- 4 to 5
Cumin seeds-1/2 tablespoons
Crushed coriander seed-1/2 tablespoons
Fenugreek seeds-1/4
Chopped onions-1 medium
Chopped ginger-1 tablespoons
Chopped green chilli- 1/2 tablespoons
Cumin powder-1/2 tablespoons
Garlic paste-1/2 tablespoons
Chopped coriander leaves - 4 to 5
Red chilli powder-1/2 tablespoons
Turmeric powder-1/2 tablespoons
Aamchur powder-1/4 tablespoon

Method

Peel the raw banana,cut into round shape and put raw banana pieces into water .
Heat oil in kadahi, add fenugreek seeds,Chopped ginger, cumin seed and stir it.
When they stop to crackle then add chopped onion and saute until onion get light pink colour.
Now add chopped green chilli,raw banana(drain raw banana pieces from water),and stir it few second.
Now add green peas and saute until it gets soft.
Further add salt, turmeric powder,red chilli powder, crushed coriander seeds, aamchur powder, cumin powder and a little bit of water, garlic paste and saute it for  2 minutes.
Now add chopped coriander  and stir it
Ready to serve for chapati and steamed rice.

Ingredients-
Papad-3 to 4
Murmura-/puffed rice -2 cup
Soaked fried peas-2 tablespoons
Soaked fried black chickpeas-2 tablespoons
Boiled fried potatoes cubes  -2 tablespoons
Fried peanut-2 tablespoons
Finely Chopped onion-2 tablespoons
Chopped tomatoes- 2 tablespoons
Garlic chutney,-11/2 tablespoons
Lemon juice-2 tablespoon
Chopped coriander leaves-2 tablespoons
Chopped green chilli-1 tablespoons
Navratan namkeen-2 tablespoons
Boondi and sev namkeen-2 tablespoon
Black salt - as required
Regular salt as required
Ingredients for garlic chutney-
Garlic cloves-7 to 10
Dry red chilli-2 to 3
Chat masala -1/4 tablespoons
Cumin powder-1/4 tablespoon
Mustard oil- 2 tablespoons
Black salt - as required
Regular salt
Method to make garlic chutney-
Soak dry red chilli in warm water for 2 to 3 hours.
Take a grinder,add garlic cloves,red chilli salt,chat masala, cumin powder  black salt and grind it.then add hot mustard oil and mix it. Chutney is ready to add in bhel.
Method-
Take a large bowl add roasted murmura,fried peas,fried peanuts,fried black chickpeas, chopped onions, chopped tomatoes, chopped coriander leaves,garlic chutney,salt, black salt, lemon juice chopped green chilli,boiled fried potatoes cubes and mix it.
Sprinkle navratan  namkeen,boondi,sev and mix it.
Take 1/2 part of papad and roast it on nonstick tawa and make a cone shape by folding it immediately.
Now fill the bhel inside roasted papad .
Ready to serve.
