Pav bhaji recipe

Ingredients-:



Method -:


Heat oil in kadahi, add butter(one tablespoon)  and heat it .
 Add cumin seed and allow it to crackle.
 Add chopped onion and stir until it gets  golden brown.
 then add  garlic paste, and stir until raw aroma of garlic goes away.
Now add ginger paste ,chopped green chilli and  stir it for two minutes.
 Add chopped tomatoes and stir until it gets soft and mushy.
 Then add salt and stir it.
 Add peas and saute it for 2 minutes.
 Add chopped carrot, chopped capsicum, chopped cauliflower in it.
 Stir frequently until they get soft.
 Add turmeric powder red chilli powder,pav bhaji masala , chopped coriander leaves and saute it for one minute.
 cumin powder, coriander powder ,salt and small amount of water  and stir it.
 When masala and vegetable  cook properly then add boiled mashed potatoes and stir it.
 Add again 1/2 cup water in it and mash vegetables with help of masher.
 Add one tablespoon butter in it and boil for few minutes.
 Ready to serve with buttery pav.

Pea - 1/2 cup ( you can boil them)
Chopped carrot-1/2 cup
Chopped capsicum- 1/2 cup
Chopped cauliflower-100 gram
Chopped tomato-2
Garlic paste -1 tablespoon
Ginger tablespoon-1 tablespoon
Chopped coriander- 3 to 4 tablespoon
Chopped green Chilli-2 to 3
Butter-30 gram
Kashmiri red chilli powder-1 tablespoon
Turmeric powder-1/2 tablespoon
Pav bhaji masala -11/2tablespoon
Cumin seeds-1/2 tablespoon
Cumin powder-1/2 tablespoon
Coriander powder-1/2 tablespoon
Salt to taste
Cooking oil

METHOD..

Bread besan toast

Ingredient-

Besan/Gram flour/chickpea flour -1cup
Bread -5 to 6
Chopped onion-1/2cup
Chopped coriander-1/2 cup
Chopped tomatoes-1/2 cup
Chopped ginger-1 tablespoon
Cumin seeds-1/2 tablespoon
Chaat masala-1/4 tablespoon
Red chilli powder-1tbsp
Chopped green chili-1 tbsp
Turmeric powder-1/2 tbsp
Salt as required
Oil for frying

Method-

  • Take a bowl add  besan,salt ,turmeric powder red chilli powder cumin seeds and chopped tomatoes , chopped green chilli, chopped coriander,Chaat masala and add water to make batter .The batter should  not be more thin.
  • Cut the corner of bread from all sides and make a triangle shape .
  • Heat oil in tawa, spread evenly. Dip the bread in batter and  put it on tava .
  • Drizzle one tablespoon oil from all side of bread
  • When bread gets cooked on one side. cook other side  by flip it using spatula and drizzling some oil.
  • remove it from plate
  • Serve it with chutney.

 Ingredients..
Green peas (matar)- 2 cup
Garlic paste -2 tablespoon
Ginger paste- 1 tablespoon
Red chilli powder 1 tablespoon
Turmeric powder-1/2 tablespoon
Cumin powder -1 tablespoon
Coriander powder 1/2 tablespoon
Black pepper-1/4 tablespoon
Bay leaf -2 to 3
Asafoetida (Hing) a pinch
Cinnamon- 1 piece
Cloves-4
Cardamom-3
Salt as required
Mustard oil for cooking as required
Water as required

Method-
  • Grind fresh green peas coarsely  with help of a little amount of water and leaving few peas whole.
  • Heat oil in kadahi.
  • Add bay leaf, cloves, cinnamon, cardamom and when they start to  crackle then add  ginger paste, garlic paste, red chili powder, turmeric powder, cumin powder,black pepper powder,asfoetida, coriander powder, salt and some amount of water and stir it until oil come out on the side of masala then add whole peas and cooked until peas get soft . Further  add grinded peas in it and cooked it for 3 to 4 minutes then add water to make a nimona thin.
  • serve it with rice .

Palak matar

Palak matar












Ingredients-
Spinach-500 gram
Matar /peas-11/2 cup
Chopped onion -1 medium
Chopeded tomato-1 medium
Chopped green chilli-2
Garlic paste-2 tablespoon
Ginger paste-11/2 tablespoon
Kasuri methi/dry fenugreek-2 tablespoon
Bay leaf-2
Cinnamon-1/2 stick
Cardamom-2
Cloves-4
Cumin powder-1/2tablespoon
Black pepper-1/4 tablespoon
Coriander powder-1/2 tablespoon
Turmeric powder-1/4 tablespoon
Red chilli powder 1/2 tablespoon
Salt to taste
Oil as required
Fresh cream for garnishing
Method-
Clean and wash palak for 3 to 4 time.
Cut the palak and heat the kadahi add chopped palak and stir until it gets soft.
Remove it and put in bowl.
Heat oil in kadahi add bay leaf,cloves cinnamon,crushed cardamom and allow them to crackle.
Add chopeded onion and saute until it
gets golden brown then add garlic paste , ginger paste,chopped  tomato and saute until it get soft.
Further more add peas and cook until peas get soft.
Add ,turmeric powder,red chilli powder cumin powder,black powder,kasuri methi, coriander powder,salt little amount of water,and saute it .when oil start to get separate from masala than add cooked palak and stir it for 2 to 3 minutes.
Garnish with cream.
Serve with roti or rice
